Day two bites the dust and I still have 6 points left over. I am now eating things just to get rid of my points, I just ate some imitation crab meat and drank a cup of milk but to tell you the truth I do not feel in the least hungry.Earlier on today however I was feeling the effects of limited intake, but I have always been a morning eater and not much fro evening meals. 

So what did I eat today, again this morning I had grits with raisins, however this morning I cooked them fresh and they where better than yesterdays reheated offering. For lunch I had a soft boiled egg on rye covered with baked beans and surrounded by mushrooms and man was it good. 

For dinner i had a cup of curried split pea and lentil soup, roast chicken and mashed potato with kale washed down with a cup of skim milk. 

This is a total of my food consumption today

  • Breakfast: 1/4 cup of grits = 1/8 cup of raisins. Total 4 pointsSnack: 10 almonds. Total 1 point 
  • Candy: 1 piece of weight watchers English toffee square. Total 1 point 
  • Lunch: I boiled egg 2p, 1 slice of rye 2p, 1/2 cup of Heinz baked beans (Irish Style) 1p, 4 sliced mushrooms 0p. Total 5 points 
  • Dinner: 1 cup of curried pea and lentil soup 1p, 3oz roast chicken breast meat 3p, 1 cup mashed potatoes mixed with kale ( mashed with a little salt and skim milk, no butter)2p, cup of skim milk 2p. Total 8 points 
  • Desert: 1/2 cup of Greek Yogurt 2p with 1 table spoon of cherry jelly 1p. Total 3 points 
  • Supper: 2 oz imitation crab meat 1p and 1 cup of skim milk 2p. Total 3 points 

Total for day= 25 

So there we have it day 2 is in the books and so far it hasn’t been that bad but the truth is that I have yet to be tempted. My wife is running a 5k on Sunday which is her birthday and she wants to go for Chinese food afterwards, we’ll see how that goes.

For anyone interested in the egg and beans on rye with mushrooms it goes like this and it is really easy, in fact the hardest part is the measuring.

  • Boil one egg softly
  • Lay it on a slice of quality rye bread and cut it in half letting the yellow spill over the rye bread
  • Cover with 1/2 cup of Heinz baked beans heated in micro wave or on stove top ( Heinz baked beans are available in any grocery store that stocks Irish merchandise)
  • Surround with sliced mushrooms that you have heated in microwave or on dry frying pan. Use as many mushrooms as you like they are free.

And as they say in the movies Bon Appetit.

The curried split pea and lentil soup is equally simple to make.

  • Boil 1/2 cup of lentils with 1/2 cup of split peas until they are soft which could be along time.
  • Add 1/2 chicken bullion cube
  • Add level table spoon of medium curry powder.
  • Season to taste.

This recipe make two 1point servings

For a super zero point desert add a jello sugar free gelatin snack flavour of your choice  to a Yoplait fiber one key lime pie.

It’s pointless so go get it.
