Pickers have Bigger Knickers

Its day three and I am surviving on 25 points a day. Had a scrambled egg with tomatoes and mushrooms for breakfast. My husband made a great no points vegetable soup which takes the edge off during the where’s the fridge hours of mid afternoon.

Here’s the recipe for the vegetable soup. Make a huge pot and it will do you for a few days.
Can of tomatoes
Zucchini (America or (Courgette) Europe
Summer Squash
Onion
Carrot
Swede (turnip) if available (tends to add a delicious sweetness)
Red or green pepper or both
Any other vegetable you can think of that is available.
Large dash of soy sauce
Large dash of Worcestershire sauce
Salt is desired
Pepper if desired
Over the years I have also added Chinese five spice powder or Chile sauce.
Any seasoning that you want that is fat free

Dice all the vegetables
Put in large pot and cover with water
Boil to your hearts content.

Note: Potatoes beans and peas are not vegetables and should not be added. Potatoes are carbohydrates. Beans and peas are both carbohydrates and protein.
If you prefer a smooth soup then after it is cooked you can give it a quick whizz in a blender.

This soup is one of the miracles of Weight Watchers given to me by a leader in the old country.

And always remember as my sister in law used to say “Pickers have bigger knickers.”
